Motivated by the search for the best cocoa in the world, Cath, a geologist by profession, went on a quest to discover plantations in Indonesia, Honduras, Colombia, and Peru. For a year, she learned everything about this wonderful bean, then, started experimenting when she returned to Quebec. She did her first roasting, grinding, and tempering tests in her Montreal apartment to create recipes of unique and decadent chocolate, made with the highest quality cocoa beans harvested from all over the world.
